Our Story

Laboratory Sous Vide was born from a passion for culinary innovation and a deep love for community. It was founded by a food enthusiast and now first-time entrepreneur, Dale Durant. Our restaurant began as a dream to bring the unique flavors and techniques of sous vide cooking to the heart of Vancouver. With years of experience in the culinary industry and a relentless pursuit of perfection, Dale created a dining experience that marries precision with creativity, delighting the senses of every guest.

However, our journey hasn’t been without its challenges. In 2021, Dale Durant brought his unique vision to life with the launch of his restaurant, The Laboratory – Sous Vide Inc. However, shortly after its opening, Dale’s business faced a major setback. Deceived by a deceitful sub-landlord, Dale ended up paying double the rent for his space, with the realtor turning a blind eye to the situation. Despite his efforts, Dale had to make the difficult decision to close the restaurant. With Vancouver’s challenging economy, Dale was forced to sell his home in 2023. Unfortunately, even this drastic step was not enough to cover his debts, and for the past 8 months, Dale has been experiencing homelessness. Our story is one of hope, transformation, and a steadfast belief in a brighter future for all.
